About Your Job:

The purpose of this role is to maintain operation and planning for all sections in the shift in terms of manpower and workflow. You will be liable for the future planning of the section and following up day-to-day operations of food. You will be responsible for one outlet within the production department.  


In this position, the responsibilities include, but not limited to, the following:

  • To manage production of all meals within the outlet in all shifts;
  • Monitor on-time delivery of all meals to operations department as per production handover plan;
  • Monitor the meals produced by staff within the section;
  • Check the meals prepared by the section and ensure that the standard recipes are being followed by the team, hence delivering meals of the highest standards to the airlines;
  • Assist the Executive Sous Chef for future planning and support during menu development and presentations to ensure good quality meals;
  • Check the quality of raw materials being received in the kitchen and highlight any quality issues to purchasing for corrective action;
  • Maintain and monitor high standards of cooking and presentation for all the Amiri and VVIP flight preparation (seasoning, portion size and appearance);
  • Support the management team to ensure targets are met with staffing and food cost;
  • Conduct weekly yield test to control food cost;
  • Conduct meal weight and meal tasting checks shift wise and take corrective action as required.


About You:

To be successful in this role, you should have:

  • Bachelor's Degree or equivalent
  • Minimum 4 years' of related experience 
  • Minimum 1 year experience as a Junior Sous Chef (preferred)
  • Good knowledge about food and beverages
  • Good computer skills in MS Office
  • Basic food hygiene and HACCP skills
  • Keen awareness of new trends and directions in the fine dining service industry
  • Ability to effectively supervise and train a large diverse workforce 
  • Experience in managing a high-pressure environment
  • Planning and supervisory skills
  • Strong business acumen
  • Strong English communication skills
